Veggie Burgers

Ingredients

1 can kidney beans, rinsed and drained
1/2 cup rolled oats
1/2 cup finely chopped fresh mushrooms
1/2 cup finely chopped onion
1 carrot, shredded
1/2 cup chopped red capsicum
2 garlic cloves, minced
2 tbsp. tomato sauce
1/2 tsp. salt
1/8 tsp. white pepper

Method

1. Combine all ingredients in a food processor or blender. Pulse or blend until coarsely chopped. Do NOT puree.

2. Chill mixture, then shape into 6 x 1/2″ thick patties or 4 larger patties. Wrap and freeze.

3. To cook, thaw patties in microwave or overnight in the refrigerator, then grill for 10-12 minutes or until patties are thoroughly cooked. They will still be a little soft so some care should be taken when flipping and serving. Serve on hamburger buns with the usual salad and condiments. Makes 6 burgers.
